This elegant dessert features a crunchy biscuit base, a creamy berry mousse middle layer made with silken tofu and Juice Plus Perform, and a rich chocolate topping. Garnished with fresh berries and mint leaves, it's a visually stunning and delicious treat suitable for special occasions or a luxurious end to a meal.

 

Ingredients 


Biscuit base:

+  1 cup digestive biscuits (or Graham Crackers), crushed
+  2 tbsp melted coconut oil

Berry mousse (middle layer):

+  1 cup mixed frozen berries (raspberries, strawberries, or blueberries)
+  1/2 cup silken tofu
+  1 scoop Juice Plus Perform
+  1-2 tbsp maple syrup (to taste)
+  1 tsp vanilla extract

Chocolate topping (top layer):

+  1/2 cup Cacao Rocks
+  1/4 cup almond milk (or plant-based milk of choice)
+  1 tbsp maple syrup (optional for sweetness)

 

Directions


Prepare the biscuit base:

  1. Combine the crushed biscuits and melted butter in a mixing bowl until the mixture resembles wet sand.

  2. Press the mixture firmly into the bottom of serving glasses or dessert jars to create an even layer.

  3. Place the glasses in the refrigerator to chill while you prepare the other layers.

Make the berry mousse:

  1. Blend the frozen berries, silken tofu, Juice Plus Perform, maple syrup, and vanilla extract in a high-speed blender until smooth and creamy.

  2. Adjust the sweetness with additional maple syrup if needed.

  3. Spoon the mousse evenly over the chilled biscuit base and smooth the tops with a spoon.

  4. Return to the refrigerator to set for at least 30 minutes.

Prepare the chocolate topping:

  1. Melt the cacao nibs with almond milk in a double boiler or microwave in short bursts, stirring frequently until smooth.

  2. Add maple syrup if you'd like a sweeter chocolate layer.

  3. Pour the melted chocolate mixture gently over the berry mousse layer in each glass.

  4. Allow the chocolate to set slightly in the fridge for about 10–15 minutes.

Garnish and serve:  

  1. Top each dessert with frozen or fresh raspberries and a sprig of mint.

  2. Serve chilled and enjoy!
